Introduction

 

Glucose syrup, also called corn syrup or liquid glucose, is a kind of mixing syrup which is made by starch or starchiness. It contains glucose and is produced by enzymes process.According to the Detrose Equivalent (DE) value, glucose is divided into three categories which are called low DE, intermediate DE and high DE.

Features and Application

Glucose syrup has mild and moderate sweetness, good anti-crystallization and oxidation resistance, moderate stickiness, and good chemical stability. It is widely used in process of candy, jam, jelly, beverage, dairy product, gourmet powder and cigarette.In addition, glucose is used as accessories of oyster sauce, dark soy sauce and other seasonings. It is also used in production of high-grade soft candy and hard candy.
